Pumpkin Chocolate Chip Cookies

Oh my heavenly deliciousness! Seriously, you have to make these. A friend of mine posted the recipe on her blog (thanks Stephanie!), probably not even realizing it's a vegan recipe, so I had to make them for Family Home Evening Dessert. There are none left. Literally, not even 1. Mmmmm....
Take one spice cake mix (Betty Crocker makes a nice, non-dairy one)
Mix with one 15 oz. can pumpkin and a handful (however much you want) of vegan chocolate chips
Put on cookie sheet and bake at 350 for 15-20 minutes. Allow to cool slightly on cookie sheet before removing to wire rack.
Try not to eat entire batch in one sitting. Go ahead, try. You will fail.

  1. well, i think you have to like pumpkin first but, this i know, you are a great mama for being so sweet to your kids! nothing better than a yummy smelling kitchen and getting to eat what's making that yummy smell! love this season!

  2. So glad you liked them. My brother was vegan for quite awhile, so I have a few vegan recipes in my pocket. I even have one for homemade Hostess cupcakes. Although now that I typed that, I'm not sure where it is. XOXO
