The Secret

So there is a secret to making good vegan cookies. For those who know me, you all know that I love to bake dessert! And I always use real, salted sweet cream butter. This is very important to perfect desserts. I tried several vegan cookie recipes that I found online, but they just weren't as good as my recipes, you know? They were just missing something. Soooo....I bought something called Ener G Egg Replacer, to sub for the eggs in the recipes, I used Earth Balance Vegan butter, and (da da da daaaa), I added extra salt, and I was able to use my very own cookie recipes and have them turn out divine. So, it's surprisingly the extra salt that made these vegan cookies as delicious as my old ones used to be. (Trust me on this; it took about 10 batches of various kinds of cookies and me saying, "well, it's almost as good as the original" for me to figure out what was missing!)
Here's what I made today:
Vegan oatmeal cookies
1 c earth balance vegan butter, softened
1 c packed brown sugar
1/2 c granulated sugar.
Beat until creamy.
Add 2 eggs worth of Ener G egg replacer (3 tsp mixed with 4 tbsp warm water)
1 overflowing tsp vanilla
Beat well.
Add 1 1/2 c flour
1 tsp baking soda
2 overflowing tsp cinnamon
1 tsp salt (up from 1/2 originally called for)
Mix well.
Add 3 c quick oats, mix, bake in 350 oven for 8-10 min. Oooooohhhh, my house smells so good!
