This one was a pretty decent approximation of an old favorite, though Claire (the Queen of Mac and Cheese) was not entirely convinced. She still liked it though.
1/2 chopped onion, sauteed in a nonstick pan for 5 min.
In blender:
1 c cashews
1/3 c lemon juice
1 1/3 c water
1/2 tsp sea salt
4 oz jar roasted red peppers, drained
3 Tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder (I only had onion salt so I added 1/2 tsp)
After blending well, pour over 16 oz cooked, whole grain pasta and bake (I put a lid on it) for 20 min at 425. Good stuff.
