So Simple, So Delish
For Jennifer, I am keeping posted yummy vegan recipes. This one was super easy, simple, and is one of our new favorites. I made tostadas by taking corn tortillas (much lower fat than their flour counterpart) and crisping them under the broiler. Then I smeared some vegetarian Rosarita refried beans on top and put them back in the oven till they were nice and toasty. It's the toppings that made this amazing. Here's what I put on mine: lettuce, tomato, cilantro, avocado slices, salsa and I squeezed a lime over the top. Yummy! I also had chopped olives on the table for those who like them, and Jason always puts onions on everything. We will forever be eating this, and the flavors were so amazing, we didn't even miss the cheese, if you can believe that.
